Guest Frier Announced for March Complete Guide to Fish & Chip Shop Management Course

The National Federation of Fish Friers (NFFF) are delighted to announce that Stuart Fusco of Whitby Fish & Chips will be our guest frier on the March three day training course: NFFF Complete Guide to Fish and Chip Shop Management.
The Whitby Fish & Chip company own and operate Quayside Fish and Chips, Royal Fisheries and the Fish Box in Whitby, and also a second Fish Box in Robin Hoods Bay.
Quayside Fish and Chips in Whitby was named the UK’s number 1 Fish and Chip Shop in 2014 and Stuart has also achieved personal success, being named the Drywite Young Fish Frier of the Year in 2004.
The course commences on the Monday 5th March, concluding on the Wednesday 7th March. Stuart will assist the NFFF training team for one day and will share with you his knowledge and experience of his journey in the industry and the awards.
The course will cover:
- Product sourcing
- Fish, potato and batter selection and preparation
- Types of oils and fats
- Hands on cooking including correct frying temperatures, range management and portion control
- Oil management
- Food Hygiene
- Health and Safety requirements
- Managing accounts
- Dealing with VAT
- Customer service
