Champion Frier on the August Three Day Course

The National Federation of Fish Friers are delighted to announce James Ritchie from Simpsons Fish & Chips will be our guest frier on the Tuesday of the August ‘Three-Day Training Course: NFFF Complete Guide to Fish and Chip Shop Management’. The course takes place on the Monday 8th through to Wednesday 10th August.
James Ritchie owns award winning Simpsons Fish & Chips based in Cheltenham and was crowned number 1 fish and chip shop in the UK at the recent National Fish and Chip Award 2016. Simpsons has won numerous awards including,

Over the three days students will cover,
- Product sourcing
- Fish, potato and batter: selection and preparation
- Types of oils and fats
- Hands on cooking including correct frying temperatures, range management and portion control
- Oil management
- Food hygiene
- Health and Safety requirements
- Managing accounts
- Dealing with VAT
- Customer service
