NFFF Guest Tutor Announced for Second January Three Day Course

The National Federation of Fish Friers are delighted to announce Tracy Poskitt will be a guest tutor on the second January ‘Three-Day Training Course: NFFF Complete Guide to Fish and Chip Shop Management’.

Tracy Poskitt is a former winner of the Seafish Independent Takeaway Fish & Chip Shop of the Year competition in January 2011.

Over the three days students will cover,

  • Product sourcing
  • Fish, potato and batter: selection and preparation
  • Types of oils and fats
  • Hands on cooking including correct frying temperatures, range management and portion control
  • Oil management
  • Food hygiene
  • Health and Safety requirements
  • Managing accounts
  • Dealing with VAT
  • Customer service
