Limited Spaces Remain on July^s Three-Day Training Course

Limited places remain on the July Three Day Training Course which takes place 4th, 5th & 6th of July. We are delighted to confirm Sid Papacaoulla & Dino Papadamou will be our guest friers on the July ‘Three-Day Training Course: NFFF Complete Guide to Fish and Chip Shop Management’.

Sid Papacaulla owns Papa^s Fish and Chip shop based in Hull and is the largest all year round fish and chip restaurant in the UK while Dino Papadamou is the day to day manager of the Hull restaurant. Papa^s Fish and Chips has won numerous awards including,

  • 2016 Fish and Chip Award Independent Restaurant Award Finalist
  • NFFF Quality Award holders
  • MSC Certified
  • 5 Star Food Hygiene Rating
  • GF Accreditation

Dino also finished 3rd in the 2016 Drywite Young Fish Frier of the Year competition.

Over the three days students will cover,

  • Product sourcing
  • Fish, potato and batter: selection and preparation
  • Types of oils and fats
  • Hands on cooking including correct frying temperatures, range management and portion control
  • Oil management
  • Food hygiene
  • Health and Safety requirements
  • Managing accounts
  • Dealing with VAT
  • Customer service
