Award Winning Guest Frier Announced for April Complete Guide to Fish & Chip Shop Management Course

The National Federation of Fish Friers (NFFF) are delighted to announce that Mathew Williams of The Crispy Cod will be our guest frier on the April three day training course: NFFF Complete Guide to Fish and Chip Shop Management.
Mathew owns and operates the awarding Crispy Cod which has outlets in Tonyrefail and Gelli in Wales. Mathew has over 10 years’ experience within fish and chips and was a trained chef before joining the fish and chip industry.
The Crispy Cod in Gelli was named the number 1 fish and chip shop in Wales at the 2019 National Fish and Chip Awards in January.
The course commences on Monday 8th April, concluding on the Wednesday 10th April. Mathew will assist the NFFF training team for one day and will share with you his knowledge and experience of his journey in the industry and the awards.
The course will cover:
- Product sourcing
- Fish, potato and batter selection and preparation
- Types of oils and fats
- Hands on cooking including correct frying temperatures, range management and portion control
- Oil management
- Food Hygiene
- Health and Safety requirements
- Managing accounts
- Dealing with VAT
- Customer service
